Easy Taco Salad

I make this taco salad at least every other week, it takes about 30 minutes to make, 45 if I make my own taco seasoning. If crunched for time I’ll use a taco mix from Trader Joes or Simply Organic Taco Mix from Wholefoods.

Ingrediants:

  • 1 to 1/2 pound of ground beef or ground turkey
  • 1/2 chop white or red onion if you want a bit more onion flavor to your meat
  • 3 tortillas
  • 1/2 chopped red onion
  • arugula or prefer lettuce of your choice
  • avocado
  • lemon
  • pepper
  • salt 
  • olive oil
  • half a lemon
  • 1-2 garlic cloves
  • handful of grape tomatoes, chopped in half or minced if feeding young children

optional:

  • sour cream
  • salsa 

Before cooking meat warm up 3 to 4 corn tortillas, either bake corn tortillas for about 15 minutes or until brown in the oven at about 350 degrees or fry tortillas in olive oil until shell is hard. Saute until thoroughly cooked, if any oil is still in pan- drain then add taco spice. Squeeze lemon, chopped garlic, about two tablespoons of olive oil, salt and pepper, whisk with a fork to make dressing. I prefer to toss the salad with the dressing, tomatoes and onion. Top with 1/2 to 1 cup of ground meat, cruch up tortillas, sliced avocado and ta da your taco sald is ready.

Taco Seasoning via diylife

  • 2 tsp. chili powder
  • 1.5 tsp. paprika
  • 1 tsp. onion powder
  • 1/2 tsp. unrefined sea salt
  • 1/2 tsp. garlic powder
  • 1/2 tsp. ground cumin
  • 1/2 tsp. oregano
  • dash of ground cayenne pepper
  • freshly ground black pepper to taste
