Quick & Easy

Guess its a food week for me! This is probably due to my incessant desire to have dinner made when I get home at night so I can enjoy my children before they go to bed and because I don’t want to spend too much of my precious alone time cooking!
Don’t get me wrong, I love cooking. But cooking in peace and quiet; not with a baby hanging off my leg and an over eager toddler who wants to stir what is the hottest thing in the kitchen at the moment!
Since my quest for quick and easy has dominated during this post holiday slump, I discovered an awesome recipe that took 5 minutes to make from stuff I already had!

Ingredients:
-1 package of Trader Joe’s ready made lentils (in produce section)
-1 package of Trader Joes frozen Quinoa and Veggies (in frozen section)
-2-3 tbsp of homemade vinaigrette

Defrost the quinoa mixture in your fridge or counter. When defrosted, cut open quinoa and lentil packages, dump contents of both in bowl, add vinaigrette and stir. Feel free to stir in any extras you might have like fire roasted bell peppers, marinated artichoke hearts, raisins and/or sliced almonds.
Done. Its delicious, nutritious, easy. Both my kids ate it too which is MAJOR! I think I have a new dish!
