Crockpot: Slow cooked pulled pork tacos

This installment of DINNER: OWNED BY MAMA is featuring Jade, from Violet Pepper, a great boutique that has a new goal for 2015.  Violet Pepper plans to simply the business by dealing with fewer vendors and start carrying more vintage and previously worn items.  Jade, who is not only a great mama, is also a smart business owner and is doing what more businesses should do - she is listening to her customers.  And her customers have spoken (or rather asked....) looking for more vintage items.  After a day of listening, like any working mama, Jade loves to come home to a warm family dinner.  Like many of us, Jade thinks the most satisfying meals, in terms of easiness and taste, are ones cooked in the crock pot.  The night before an anticipated hectic day, Jade will pull some meat out of the freezer to defrost in the refrigerator overnight.  In the morning she simply drops it into the slow cooker and heads out the door.                
    
          

 

Jade's favorite slow cooked dinner is a simple pork loin that you can turn into pulled pork for tacos or sandwiches, or, in the case of her 3 yr old, a simple meat dish.  Jade and her husband tend to enjoy a pulled pork taco, while her daughter enjoys the meat with whatever veggies are in the fridge.  Simple.  Easy.  And everyone is happy! 
Here's the recipe:
Create a rub with some mustard powder, brown sugar, cumin, salt & pepper, paprika and 2 cloves of chopped garlic. Spread with your hands over a 3 lb cut of pork (Jade typically uses pork tenderloin to ease up on the fat) and place in the slow cooker with a bottle of bbq sauce, some apple cider vinegar and a little bit of water. Cook on low for 8 hours. Shred with 2 forks.
Serve with corn or flour taco sized tortillas, shredded cabbage, avocado, feta or cotija cheese and a little sour cream, salsa and/or hot sauce.
