A cup of chai....

I am chai obsess. It is my ultimate comfort drink and I cherish it when I have the time to properly make a masala chai. The best chai (in my opinion) that can be bought is call Bridgets Homemade Chai that sells at random stores in L.A and is served at Kings Road Cafe however I cannot find it here. My on the go chai stop is Urban Rustic who put some    work in their chai but I mostly make mine at home. I buy the Rishi Masala Chai concentrate at Wholefoods when I can find it however its time for me to start getting my own spices together and making it myself. It’s actually quite easy. I found the recipe below which is for a serving for 6 (through Epicurious) however I use 1% for milk. Also, when making one cup all you need is two table spoons of your mixture, 1 cup water and 1 cup milk. Let it reach a boil, then simmer slowly for at least 5 minutes, I let mine simmer for 10. Delish.

  • 2-inch piece fresh ginger, cut into thin rounds
  • 2 cinnamon sticks
  • 2 teaspoons black peppercorns
  • 10 whole cloves
  • 6 cardamom pods
  • 6 cups cold water
  • 6 bags of black tea (preferably Darjeeling)
  • 2 cups whole milk
  • 1/2 cup (packed) golden brown sugar
