My amazing food guru friend Yasmin dropped off this book by Carrie S. Forbes to me last week and I have been plotting meals since. I'm excited to try the Chicken Corn Bites and Cheesy Polenta with Roasted Vegetables. My son really resists new dishes and with gluten free a goal in cooking this is even more challenging. These recipes feel do-able and relaistic in terms of what a kid will eat. Check it out here.
